y'know, there's nothing like a few days of cramps and migraines to really knock the wind out of your sails. it's especially bad when your head hurts enough that you can't get up to find your medication, and the cats just refuse to help. damn cats...so the last few days have been exceptionally boring, what with napping, making toast, napping, watching TV, napping, reheating some leftovers for dinner, and sleeping. thank god i had some chickpeas and rice left over that i could just zap in the microwave; otherwise i might have just laid on the couch all night being hungry.
the chickpea recipe is one of my favorites, and i always forget how good it is until i drag out the recipe again. it was originally mike's chickpeas with chicken recipe, but i wasn't eating chicken at the time, so it became chickpeas and chicken without the chicken. it also donned on me that i don't follow the directions anymore, just throw things together out of habit. this is how i made it last night:
Micheal's Chickpeas and Chicken without the Chicken3 onions, chopped
butter
2 cans chickpeas, drained
1 can chopped tomatoes
1 can tomato sauce
salt
riceSaut� the onion in a stockpot in a generous amount of butter until softened. Add chickpeas, tomatoes, tomato sauce and 2 T butter, and salt to taste. Simmer until slightly thickened. Meanwhile, prepare rice - either white or brown is fine. Serve chickpeas over rice.
so it's not fancy, but it's easy and satisfying, and it reheats well. you could dress it up, i suppose, if you wanted. or you could add the chicken back in. i like it like this, tho, as a simple one-dish meal.
oddly, the cats like it, too. for some reason, they both have a thing for tomato sauce. it doesn't strike me as the kind of thing cats would go for, but they both hover around, waiting for me to put the bowl down on the floor so they can lick it clean. stanzi also has a thing for sugar cookies. she likes to nibble the points off of the star cutouts, if i accidentally leave the plate where she can get at it.
